Layer the following ingredients into a deep bowl:
- 1 handful washed baby spinach
- 1 handful chopped flat leaf parsley
- 1 small bunch snow pea sprouts, cut
- 1/2 ripe avocado
- 1/2 cup Crunchy Combo chickpea & lentil sprouts
- 3 small radishes, thinly sliced
- 1 ripe tomato, cubed
- 1 tin Canadian wild sardines, in spring water
Dressing:
- 30ml vinegar of choice
- 2 cloves garlic (optional)
- 1 tsp whole grain mustard
Mix together well and slowly add in 60 ml extra virgin olive oil.
Shake well and pour over salad.
Serve immediately.
