This is my version of ‘fast food’ when I don’t have time to create my usual large salad.
- 2 handfuls salad greens of your choice (spinach, kale, cabbage, mixed lettuce)
- 1 small avocado, cubed
- 1 bunch asparagus, steamed
- 1 ripe tomato, chopped
- 1 vegetable roll, from your wholefoods deli
Pick up a ready heated vegetable roll from your deli.
Place washed spinach and chopped snow pea sprouts (or other greens) on a plate.
Add heated vegetable roll, chopped avocado and tomato. Place steamed asparagus alongside.
Ready to serve.
