Spicy pumpkin roll with salad

Fast food recipe photoThis is my version of ‘fast food’ when I don’t have time to create my usual large salad.

  • 2 handfuls salad greens of your choice (spinach, kale, cabbage, mixed lettuce)
  • 1 small avocado, cubed
  • 1 bunch asparagus, steamed
  • 1 ripe tomato, chopped
  • 1 vegetable roll, from your wholefoods deli

Pick up a ready heated vegetable roll from your deli.

Place washed spinach and chopped snow pea sprouts (or other greens) on a plate.

Add heated vegetable roll, chopped avocado and tomato. Place steamed asparagus alongside.

Ready to serve.
